According to the Schales, wine-making knowledge, skills and a little bit of luck in the barrels are not the only requirements for producing a good wine—a good wine, they say, begins in the vineyard. After purchasing the vineyard, Bernd and Stefanie have spent countless hours tending to the vines—pruning, tucking, and maintaining the grapes themselves—a true labour of love. Coupled with their “German-touched” winemaking style, and meticulous harvests, 8th Generation boasts fresh and fruity white wines. While their specialty, the Riesling, showcases the deep-textured mineral note of the Rolling Hills location’s grapes.
